Some doom, sludge, post-metal and stoner bands off the top of my head: Grand Magus, Agalloch, Neurosis, Pelican, Saturnus, Candlemass, Pentagram, Ahab, Rapture, Omega Massif...

Discounting metalcore, and for argument's sake if melodic death metal is here to mean that keyboard heavy stuff, then I spent over half an hour searching, sure that I had heard at least one American melodeath band that didn't sound like Dethklok and COB had a baby, but nope. Unrelated observation, but apparently Phil Anselmo was in everything.
Really into Dead Can Dance right now.

Just in case anyone hasn't seen this yet.
I've seriously started giving Opeth a listen now. Watershed and Blackwater Park have got to be my favourite albums so far. Best track is a dead tie between Heir Apparent off Watershed and Blackwater Park off the eponymous album. Heavy, hectic stuff... and I absolutely love that neo-classical tonality they have in their later albums. If Chopin were around today, he'd be in this band.
I've started following Porcupine Tree on their new Twitter account, and apparently they're touring with Coheed and Cambria and The Dear Hunter. Yet another two prog bands I've heard loads about but haven't paid enough attention yet. Any other suggestions for you folks?
Also, Lasse Hoile, the guy who does all of Porcupine Tree's artwork, has done some fantastic videos for Opeth's Burden and Porcelain Heart as well.

I checked out Volbeat's newest, Beyond Hell/Above Heaven. I love Volbeat, but was disappointed by this one. I will say that, as a band, they are extremely dedicated, which is still respectable even if they've begun their decline.

Unrelated: I kicked ass at the Singstar party yesterday. Unfortunately, the only song I knew was Coldplay's "Fix You", which kind of dampens my achievement.
